FROM ITALIAN TRADITION TO THE TOP OF BRAZIL: LUTTY TAKES SALVADOR TO THE NATIONAL SCENE OF NEAPOLITAN PIZZA
Gaining a place among the top 10 pizza makers in the country, this gaucho of Italian descent is betting on the authenticity of Neapolitan pizza and now wants to be among the top three in Brazil.
The capital of Bahia is now home to one of the great names in national pizza. Lutty, a gaucho pizza maker of Italian descent, has been gaining prominence in the Brazilian gastronomic scene with his faithful interpretation of authentic Neapolitan pizza.
Originally from Rio Grande do Sul and now based in Salvador, Lutty carries Italian tradition in his DNA and has transformed this heritage into professional excellence.
His talent has already crossed borders: he won 9th place at the Mondiale della Pizza | FIPAN 2025 and 15th place at ANUGA 24, two important international competitions in the sector.
This year, the pizzaiolo raises the bar even higher: he will compete for a place among the three best pizzaiolos in Brazil, consolidating his name among the elite of national gastronomy.
The true Neapolitan pizza, whose preparation method — known as the "Art of Neapolitan Pizzaiolos" — was recognized as an Intangible Cultural Heritage of Humanity by UNESCO in 2017, has rigorous criteria defined by the Associazione Verace Pizza Napoletana (AVPN), an entity that preserves the standards of the original recipe.
Faithfully following these standards, Lutty works with an oven that fully meets the technical requirements of the AVPN, reaching high temperatures and guaranteeing ideal cooking in a few seconds — an essential factor to ensure texture, lightness and extreme quality to the final product.
According to the protected tradition, there are only two official flavors:
• Pizza Margherita: tomato (San Marzano or Pomodorino Vesuviano), buffalo mozzarella or fior di latte, fresh basil and extra virgin olive oil.
• Pizza Marinara: tomato, garlic, basil, oregano, and extra virgin olive oil — no cheese added.
These two classics have become Lutty's flagship dishes in Salvador.
With an 18-hour naturally fermented dough, high and airy crusts, selected ingredients, and artisanal preparation, each pizza rigorously respects Neapolitan fundamentals and provides a genuinely Italian experience to the Bahian public.
Those who wish to experience this can visit the physical location at Rua Airosa Galvão, 70, Barra, Salvador – BA, where it is possible to savor the authentic Neapolitan pizza prepared by one of the best pizzaiolos in the country.
